Instructions:

Preheat the oven to 350°F (175°C). Line two 12-count muffin pans with cupcake liners. Set aside.
In a medium-sized mixing bowl, mix together the flour, sugar, baking soda, salt, and cocoa powder. Set aside.
In a large mixing bowl, whisk together the vegetable oil, buttermilk, eggs, red food coloring, vanilla extract, and distilled white vinegar.

Divide the batter evenly between the 24 cupcake liners, filling each liner about 2/3 full.
Bake for 20-22 minutes or until a toothpick inserted into the center of the cupcakes comes out clean.
